Try this simple veg-forward side, for a punchy addition to any Thanksgiving meal.


SPIGARELLO WITH ANCHOVY BUTTER


Ingredients

2 big bunches of Spigarello
1 garlic head, cut in half
4 spoons of butter
Salt
Pepper
Water
Olive oil
5 anchovies

Method

1. Have a hot grill or hot oven ready.

2. Pull open a large sheet of foil and place a smaller sheet of parchment paper on top. Lay the Spigarello on the parchment and layer the rest of the ingredients on and around it.

3. Wrap this package well. Then, either throw it directly on a hot grill and flip every five minutes for about 20 minutes or put it inside a very hot oven for 30 minutes. Open the package, grate parmesan on top and drizzle a little olive oil over.
